A bowl of quinoa beckons for delicious additions, and it's a simple, healthy meal for anytime of the day. One of our favorites is to add roasted vegetables (sweet potatoes roasted in coconut oil), fresh avocados, black beans and arugula. Simply make a pot of quinoa (per package instructions), roast sweet potatoes tossed in coconut oil on 425 degrees for approximately 25 minutes (stirring frequently). Add all ingredients together, (goat cheese or feta can be an optional addition), drizzle olive oil and balsamic vinegar as desired and a dash of sea salt to taste. Toss and enjoy every bite!
